Trying to figure out an appropriate diet snack, I came out with a great solution: oatmeal cookies. Full of fiber, they sounded like a satisfying option to curb my sugar cravings. Considering this, I logged on to Foodbuzz and scanned several recipes until I found something I liked. And the winners are: apple oatmeal and peanut butter-chocolate oatmeal.

The recipe for the apple cookies I obtained from Simple Nourished Living. I changed a few bits, using homemade apple sauce, adding chopped dried apples and omitting the walnuts. I'm quite happy with the results. The cookies weren't overly sweet and the texture was soft. I'm aware they didn't look pretty, but believe me, they were tasty. I decorated some with almonds or raisins, to add some variety. The general consensus was: “They're good. Can I have another one?”. Success!

However, the peanut butter-chocolate cookies were my favorite. When I open the cookie jar, I'm received by a wonderful aroma. Also, the appearance of the cookies is definitely better. I followed The Kitchenarian's recipe and I couldn't believe how easy it was. For this recipe I made the peanut butter too (I'm a fan of homemade it seems). Since I like crunchy textures better, these cookies were just meant for me. Also, public opinion was favorable and I'm very happy. Double success!
